Every Christmas I have to try something new. You can tell we need more snack food around here. This year it’s cheese straws. Here’s the recipe. They turned out pretty good for a first try.
2 cups flour
2 cups shredded sharp Cheddar cheese
3/4 cup margarine
1 teaspoon baking powder
1/4 teaspoon cayenne pepper
1/2 teaspoon salt
1/2 cup water
Preheat oven to 400 degrees. Line a cookie sheet with parchment paper.
Combine flour, baking powder, cayenne pepper, salt, cheese, and margarine in a bowl and mix until well combined. (I used my mixer and dough hook.) Add water a little at a time to make a very stiff dough.
On a lightly floured surface, roll pieces of the dough into slightly thicker than pencil shaped sticks. Cut sticks into 3 to 4 inch lengths. Arrange the pieces on the cookie sheet.
Bake at 400 degrees until brown on top. The recipe I used said 5 minutes, we ended up going about 8 minutes.
Wiley says these are pretty good, but they’re filling. He can’t eat as many at a time as he can with Chex mix.
